Pumpkin season is perhaps one of the best seasons, and not just because of pumpkin spice lattes!
There are so many wonderful things you can make with pumpkin, including these delicious donuts.
The great thing about these donuts is that they are baked rather than fried, which means a yummy treat without the additional calories! They are an easy, kid-friendly recipe that is sure to have everyone coming back for seconds.
Baked Pumpkin Donuts With Brown Sugar Icing
Dry Ingredients
1 3/4 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/2 tsp ground cinnamon
1 tsp pumpkin pie spice
Wet Ingredients
1/2 cup melted coconut oil
3/4 cup packed brown sugar
2 large eggs room temperature
1 cup fresh pumpkin puree
1 tsp pure vanilla extract
Directions
Preheat oven to 350F (175C). Grease a donut pan with melted butter and set aside.
In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon and pumpkin pie spice.
In a medium bowl, whisk together the melted coconut oil, brown sugar, eggs, pumpkin puree, milk and vanilla extract until smooth.
Pour the wet mixture into the dry ingredients and gently fold everything together until just combined. Avoid overmixing.
Spoon the batter into the donut cavities, filling each halfway. For easier filling, use a large zip-top bag with a corner cut off to pipe the batter into each cavity.
Bake for 10-11 minutes or until the edges and tops are lightly browned. The donuts are done when they bounce back when gently pressed.
Cool in the pan for 2 minutes, then transfer to a wire rack to cool completely for about 10 minutes.
Brown Sugar Icing
Ingredients
3/4 cup packed brown sugar
1/4 cup milk
1 TBSP unsalted butter
1/2 tsp pure vanilla extract
1 1/2 cups sifted confectioners' sugar (icing sugar)
pinch of salt to taste
Directions
In a medium saucepan over medium heat, combine the brown sugar, milk and butter. Stir until the butter melts and the mixture is smooth. Simmer for 1 minute then remove from heat.
Whisk in the vanilla extract and sifted icing sugar until smooth. Add a pinch of salt (to taste).
Dip the donuts: Dip the tops of the cooled donuts into the icing. If the icing thickens while you're dipping, add a splash of milk or gently reheat.
Place dipped donuts on a wire rack set over a baking sheet to catch any excess icing.
Optional: top with chopped nuts or other toppings if desired
Allow the icing to set for about 1 hour before stacking or transporting.
